Olive Oil
1 Can of ground peeled Tomatoes
1 Can of Beans (any kind you have in the cupboard)
16 oz Chicken Stock
Pasta (any kind you have)
1 large onion
1packet of Sazon
Adobo
Romano cheese
Vegetables-Whatever you need to use up. Celery, peppers zucchini, summer squash, carrots...
The beauty of this soup is that you can use whatever you have on hand. The recipe is meant to be flexible and easy. My kids are not crazy about vegetables cooked plain on a plate, but they love soup. If you have picky eaters, try pureeing the soup at the end. If you have a child that does not like tomatoes, just omit that.
Saute onions, celery, scallions, in the olive oil until caramelized. Pour in the chicken broth, tomato puree and other vegetables. Simmer for at least 20 minutes or until the vegetables are softened. Add the beans and simmer for another ten minutes. Cook the pasta separately and add it at the end. Top with grated romano cheese.
If you children are helping you with this in The Learning Tower, you may want give them a bowl, and all of the food scraps- carrot tops, pepper seeds, onion skins, and let them pretend to make their own soup.
